Lyon sausage

This is an impressive sausage ! It looks like the garlic sausage (saucisson à l'ail) but is bigger and needs to be cooked. Yes, I confess I had never tested it. Thank you Carine and Nicolas for having introduced me to it. I taught them in return that preparing an homemade strawberry pie is fast and easy (see the recipe).

The Lyon sausage - saucisson de Lyon - with pistachio needs to be cooked in water during 20/25 minutes (start in cold water). It is usually served with potatoes - steam or cold with oil - as a salad by Paul Bocuse or in a brioche for the food lovers...

So we ate it with steamed potatoes - cooked with shallot and herbs - and fresh green beans. Perfect.

But you can also be less "healthy"... and cook it as a gratin !

And if you want to prepare a Lyon sausage all by yourself ? You always find how to cook a readymade Lyon sausage... But what is the recipe to make one ?
